fish tacos

LOTS OF FISH TACOS are batter and fried. these are either grilled or pan seared

INGREDIENTS

Serves 4

1 1/2 - 2 lb fish: mahi mahi, monk, cod, salmon, steak works great too

Dry Rub fish with the spice mix below

.5 tsp salt

2 tsp cumin

2 tsp ground coriander

1 tsp pimenton

1 tsp fresh ground pepper

1 tsp granulated or powdered garlic

.5 tsp cayenne

or omit dry rub and 2-3 TBSP Jerk or your favorite marinade

12 soft tacos

5 oz shishito, jalapeño or poblano peppers, diced

5 oz cubed watermelon or granny smith apple

2 TBSP + pepitas

3 oz crumbled feta or cotija

1 avocado cubed

baby greens

cilantro

pickled red onions

creme fraiche, mexican crema or sour cream

juice from 1/2 lime

PREP

Mix dry ingredients and rub onto fish or jerk

Blister peppers in hot pan with a little oil remove from pan and then sprinkle with salt

Heat cast iron to medium heat

Add pepitas and toast until light brown remove from pan

Mix peppers, watermelon, cheese and avocado (or mango salsa)

Mix washed greens and cilantro

Add little oil and sear fish, a side 3-4 minutes a side

Warm tortillas on burner set to medium low once warmed through I cover them with a lid to a large pot while I’m getting everything else together

Assemble; greens then pepper/fruit mix, fish, pickled red onions, cilantro, toasted pepitas and finally drizzle creme fraiche, sour cream or mexican crema

*pretty much anything you like to do to fish will work
