SATISFYING VEGETARIAN SANDWICH
INGREDIENTS
serves 3-4
2 loaves Italian bread
1 lb fresh mozzarella
1/2 lb roasted artichokes
1/4 lb roasted red peppers
1/4 lb sundried tomatoes in oil
romaine or whatever
balsamic vinegar
thinly sliced avocado (optional)
PREP
Slice loaves in half, and then most of the way width wise to make a hinge
Thinly slice artichokes, peppers and sun dried tomatoes and arrange on bread
Drizzle with balsamic vinegar
Thinly slice mozzarella and cover with lettuce
left over roasted artichokes, roasted red peppers and sun-dried tomatoes in oil. this could be filling for a frittata or puree in a food processor makes a great spread on crackers or bruschetta
