potato frittata

A frittata is a great way to clean out your fridge. Almost anything can go in a frittata. 

INGREDIENTS

Serves 4-6 with a salad or some sautéed greens

8 eggs

1/2 cup milk

6-8 oz diced swiss or jarlsberg (and/or whatever little nubs of cheese may be hiding in your fridge)

3 medium size potatoes diced

3 TBSP olive oil

large green pepper diced (or yellow, red and green small peppers, or poblano or you get the idea) 

1/2 medium onion diced

salt and pepper to taste

PREP

Preheat oven to 400 degrees

Scramble eggs with milk, salt and pepper

Heat 10”* cast iron on medium (*12” will do but frittatas will be a bit flat)

Add oil

Add add potatoes and onions for 10 - 15 minutes or so then add peppers until potatoes are just cooked

Add to egg mixture to pan 

Move around in pan until starts to thicken, fold in cheese until you have wet scrambled eggs

Put in oven until golden brown about 15-20 minutes

Let it cool for 5 minutes or so before cutting and serving
