baked fried chicken

Lots of crunch, less guilt and mess

INGREDIENTS

serves 4

3 lbs chicken (your favorite parts)

1 cup flour 1 tsp each salt and black pepper (optional 1 tsp five spice)

2 eggs scrambled mixed with a bunch of Franks Red Hot (or your favorite hot sauce or none)

2 cups panko bread crumbs

Butter for greasing wire rack

PREP

Preheat oven to 425

Rinse and pat dry chicken

Get three pie plates or large shallow bowls

Plate 1 add flour, salt and pepper (sometimes I add five spice)

Plate 2 add eggs mixed with hot sauce

Plate 3 add bread crumbs

Rub wire rack liberally with butter and place in baking sheet

Dredge chicken one piece at a time in flour, then egg mixture then coat in bread crumbs

Use one hand for wet ingredients and the other for dry

Place chicken skin side up on wire rack

Bake 50 minutes-1hr depending on oven, if you have a convection setting the chicken will be crispier

Serve with rice-amazo and something green
