fried rice

 

DAY BEFORE

Make rice, make a lot

3 mandatory ingredients (rice, soy sauce and scallions)

Start with cold rice

Dice all the ingredients you plan to add; make them all the same size

Make a plain omelette, cut into thin strips or whatever shape you think is fun

Finely slice scallions and separate whites from greens

3 or more cloves of garlic, smashed

Vegetables; baby bok choi, water chestnuts, bamboo shoots, carrots, bean sprouts, mushrooms

Peas (optional, I don’t like peas)

Precook the protein and vegetables and add them just before serving. If they are leftovers just cut them up and add them at the end

Get wok or cast iron really hot

Add oil 3 TBSP at least (you need a high heat oil, sunflower, avocado, coconut this will add taste too)

When its smoking add scallion whites 1 minute

Then add garlic

Then add rice; separate it with your hands as you add it

Add soy sauce until its the color that you like

Keep moving around in pan so it all gets fried but not burned

or if you like it really crispy turn down heat a bit and let it sit then scrape and repeat until its all crispy

Add proteins/vegetables and cook until just heated through

Garnish with scallion greens, bean sprouts and cilantro (optional)

You can add anything. its a great way to use up leftovers
