tuna caesar

A lot of people use mayo and make a creamy dressing. don’t. All my friends kids love this. They ask me to teach their parents how to make it. Makes a great first course or add a protein and you have a meal. We do Tuna Caesar most often.

INGREDIENTS

Serves 3-4

3 heads romaine

5 cloves garlic

3 anchovies or more

1 TBSP capers 

juice of one lemon

3 good shakes of worcestershire  

1 TBSP coarse ground mustard

1/4 cup parmesan or whatever grating cheese you prefer 

egg yolk

2-3 TBSP olive oil

PREP

Wash, tear and spin leaves

Put garlic in large salad serving bowl and mash it with a fork, add anchovies and mash them, add capers and mash them. Mash it all together

Add worcestershire and mustard and mix

Add lemon juice, egg yolk and parmesan and mix

Add olive oil and whisk

Add romaine to bowl but leave it alone while you prepare the protein

Let’s do tuna

6-8 oz ahi tuna per person

1 tsp toasted sesame oil

2 TBSP each black and tan sesame seeds, fresh ground black pepper, coarse kosher salt

1 TBSP soy sauce (just a little to get the sesame seeds to stick to the tuna)

1 TBSP wasabi powder mixed with water to form paste

Heat cast iron to medium high

Add soy sauce to tuna and rub it in, cover liberally with sesame seed mixture, flip and repeat

Add sesame oil to pan and sear tuna 2-3 minutes per side

Add a little water to wasabi and mix to very thick paste, divide into small dipping bowls

Toss salad very well

Serve in a large bowl

Finish with black pepper and more grated cheese

Slice the tuna into bite size pieces about 1/4” thick and arrange them around the edge of the bowl. Garnish with flat bread, bread sticks or something crunchy.

This is a great meal with any protein
